Betty Slowe: Schnitzel with Potato Cakes
Whenever I am in a German restaurant, I order schnitzel. The thin meat, crusted with breadcrumbs and served with a slice of lemon is delicious. In fact, the Friday special at Edelweiss in Temerson Square is schnitzel with a tangy potato salad.
Usually made with veal or pork, a Bon Appetit recipe for schnitzel using chicken caught my attention. In this recipe the schnitzel is served with an anchovy sauce. I know there is a division of opinion about anchovies. I like them a lot, but even in my little family there are those who wouldn’t touch an anchovy. I give you permission to make the schnitzel without the sauce if you must. Make the potato cakes to go along with them and serve some applesauce on the side. A dollop of sour cream on the potato cakes is tasty.
Sweet and sour red cabbage is a dish that goes well with this meal as well.
